Many people crib about their dislike towards tomatoes, and as a matter of fact, I myself used to be one among those “Haters”. Little did I know that, a little extra flavour could massively transform this boring fruit into a delicious morsel.
I really wanted to try something new with the tomatoes growing in my garden.
And like a “Faithful” Basil lover, I resorted to making a lovely salad with a combination of different types of sweet, juicy tomatoes and a lemon basil dressing. I was constantly under the impression that the basil and lemon might overpower the delicate flavour of the tomatoes but I was pleasantly surprised when I had the first bite. It was like a match made in heaven. Every single element complimented the flavour and texture of the other. 🙂
Ingredients: (Serves 4 people)
- Plum tomatoes-2
- Grape tomatoes- 5 to 6
- Baby cherry tomatoes- 10; ripe and unripe ones
- Cucumber- 16 thin slices
For Lemon Basil Dressing:
- Basil- 1 cup; leaves plucked
- Lemon juice-2 tablespoons
- Dijon mustard- 1 tablespoon
- Honey- 1 tablespoon
- Garlic- 3 cloves
- Olive oil- 2 tablespoons
- Sunflower oil- 1 tablespoon
- Salt and pepper- to taste
Method:
Quarter grape tomatoes and thinly slice the plum tomatoes. Cut the bigger cherry tomatoes in half if necessary.
For Lemon Basil Vinaigrette:
To a food processor, add all ingredients and blend until quite roughly blended. If it does not seem to blend, add a dash of water and blend. Check for seasoning and set aside. Now place the tomatoes and cucumber on the serving platter and spoon the fragrant dressing over it. Serve it immediately.
