Strawberry And Caramel Trifle

When it is strawberry season, this is something I often resort to. This trifle is perfect for a dinner party at home. Well, what can go wrong when strawberry and cream is paired?


This trifle can be made in advance and it is very easy to assemble and put together. It is a perfect example of minimal work with maximum outcome. Also it is a great desert for any party or get together. You could also use store bought caramel sauce but it’s really easy to make your own so I always make it at home!



Ingredients: (Yields about 5 big glasses)

  • Digestive biscuits- 10
  • Butter- 1 tablespoon
  • Strawberries- 100 grams
  • Granulated sugar- 1 teaspoon
  • Caramel sauce- 1/2 cup
  • Whipping cream- 200 ml
  • Icing sugar- 3 to 4 tablespoons

For homemade caramel sauce: (yields 1/2 cup)

  • Granulated white sugar- 1/2 cup or 100 grams
  • Water- 1/4 cup or 60 ml
  • Cream- 1/4 cup or 60 ml
  • Butter- 1 tablespoon


For homemade caramel sauce:

Add sugar and water in pan over a low flame. Swirling is allowed but not stirring. Once it starts turning slightly golden swirl at regular intervals. Once it becomes deep amber colour, add butter and swirl nicely. Take off flame immediately. Now add half of the cream and whisk. Keep adding the rest of the cream little by little and keep whisking until a sauce forms. It will bubble initially but the bubbles will then subside. Keep back on low heat, whisk and let caramel start to bubble and thicken. Take it off the flame. Pour into bowl, let it cool until use.

For the trifle:

Next, slice 3 to 4 strawberries length-wise and cut the rest into small cubes. Add chopped strawberries to a bowl. To it, add granulated sugar, mix and set aside. Whip the cream till you get soft peaks. Add the icing sugar one tablespoon at a time and whip till it almost forms stiff peaks. Keep in the fridge to chill. Meanwhile, you can make your digestive layer.

For Digestive Layer:

Add digestive biscuits to a food processor and pulse until fairly fine but still having texture. Melt the butter and add to it. Use a fork to mix it. The mixture should look like fine sand.


To assemble:

Add a tablespoon or so of the digestive mixture to your chilled glasses, followed by the caramel sauce. Now decorate the inner sides of the glasses using the sliced strawberries. Spoon in the cream. Add the chopped strawberries followed by the digestive mixture. Continue layering till you reach the top of the glass.


Chill in the fridge or serve immediately. You can also use smaller glasses or cups for parties and mass servings. 🙂
