Apple, Romaine And Walnut Salad With Apple Cider Vinaigrette

I make salads quite often and what I look for is a medley of flavours and textures. A balanced combination gives a perfect salad. Apple and parmesan go really well together and so does parmesan with walnut and also apple with walnuts. The three together is indeed a match made in heaven. The sharp aged parmesan along with nutty walnuts and sweet apples dressed in a beautiful apple vinaigrette is delightful. 🙂


Ingredients: (Serves 4 people)

  • Red apples- 2
  • Romaine lettuce- 2 heads
  • Red onion- 1 small; sliced
  • Parmesan cheese- 60 grams
  • Walnuts- ¼ cup

For Cider Vinaigrette:

  • Apple cider vinegar- 2 tablespoon (If you don’t get apple cider vinegar, use the regular vinegar)
  • Apple juice- 1 tablespoon
  • Shallot- 1; finely chopped
  • Chilli flakes- 1 teaspoon
  • Olive oil- 2 tablespoons
  • Sunflower or neutral oil- 1 tablespoon
  • Sugar- 1 teaspoon
  • Salt and pepper- to taste


Wash, drain and pat dry the lettuce heads. Roughly tear them into bite-size pieces. Add the lettuce and sliced onion to a large, dry bowl. Slice the apples and immediately put them in ice cold water. Slightly toast the walnuts in a pan without oil until they begin to slightly colour and release a bit of the oils in them.

In a bowl, mix the vinegar, apple juice and chopped shallot. Whisk in the oils in an alternating stream so that it completely emulsifies. Season it with sugar, chilli flakes, salt and pepper. Drain the apples, pat dry and add to the lettuce. Dress with the vinaigrette and check for salt and pepper. Place on plates. Add toasted walnuts and shave some parmesan on each plate. Serve immediately.
