Crispy Feta Salad


Basil breadcrumb coated ovenbaked feta over a bed of dressed lettuce. Feta cheese is a love it or hate it cheese! Some people are not really fond of it’s salty flavour.  This salad is for all the feta lovers and also for people who wish to give feta another try.

I actually love it while my father finds it salty when had on it’s own. This crispy oven baked feta salad actually doesn’t taste that salty and it balances out with the lettuce and the crisp covering is just an added bonus. This recipe uses a flavoured breadcrumb mixture made from scratch at home and it compliments the salty feta beautifully.

Crispy Feta Salad

Ingredients: (Serves 4 people)

  • Feta- 160 grams
  • Olive oil- 6 tablespoons
  • Basil- 5 to 6 leaves; finely shredded
  • Bread- 4 slices; preferably 1-2 days old
  • Romaine lettuce- 2 heads
  • Vinegar- 1 tablespoon
  • English Mustard- 1 teaspoon
  • Honey- 1 teaspoon
  • Salt and pepper- to taste

Method:

Carefully cut the feta cheese into rough squares, about 8 pieces, making sure not to damage it. Brush the feta pieces generously with 2 tablespoons of olive oil, on both sides. Season the pieces with black pepper on both sides.

For Basil Breadcrumb:

Preheat the oven to 180°C or 350 F. Add the slices of bread to a food processor and blitz to form coarse textured crumbs. Line a baking tray with parchment paper. Add the crumbs to a bowl and season it with pepper. To it, add 3 tablespoons of olive oil, mix and spread on the lined baking tray evenly. Bake in the oven for 6 to 8 minutes or until golden brown. Remove from oven and to it, add the shredded basil leaves.

Preheat the oven to 190°C or 374 F. Now coat the oil brushed cheese evenly with the bread crumbs on all sides. Bake the coated cheese pieces on a parchment lined baking tray  for a further 5 to 7 minutes until crispy and golden brown.

Meanwhile tear the romaine lettuce into bite-size pieces. Dress it with honey, mustard and vinegar and 1 tablespoon of olive oil. Season it with pepper and a small amount of salt and  and place the salad leaves on serving plates. Remove the crispy feta from the oven and place 2 pieces on each plate. Serve the warm crispy feta salad immediately.
