Insalata caprese meaning “Salad of Capri” or caprese salad is a simple Italian salad made of sliced tomatoes, fresh mozzarella (preferably buffalo mozzarella), and basil leaves. It is seasoned with salt and pepper and drizzled with olive oil. It is supposed to represent the colors of the Italian flag, that is red, white and green. In Italy, it is usually served as an antipasto (starter) and not as a contorno (side dish). Continue reading “Insalata Caprese / Caprese Salad”
Basil breadcrumb coated ovenbaked feta over a bed of dressed lettuce. Feta cheese is a love it or hate it cheese! Some people are not really fond of it’s salty flavour. This salad is for all the feta lovers and also for people who wish to give feta another try.

Salads when made properly are amazing and never boring! This chickpea salad is filling, healthy, can be veganised by just changing two ingredients and it is delicious. It is a great source of fiber, protein, potassium, calcium and magnesium. It is fairly easy to make, just requires soaking of chickpeas overnight.

This grilled corn slaw unlike the regular coleslaw is tossed in a refreshing, tangy-sweet lime dressing. To be honest, I wouldn’t mind a big bowl of the mayo coated coleslaw any day but this is no less and you should try it if you want to try out something new. Continue reading “Grilled Corn Slaw”
I make salads quite often and what I look for is a medley of flavours and textures. A balanced combination gives a perfect salad. Apple and parmesan go really well together and so does parmesan with walnut and also apple with walnuts. The three together is indeed a match made in heaven. The sharp aged parmesan along with nutty walnuts and sweet apples dressed in a beautiful apple vinaigrette is delightful. 🙂
Usually for a salad, we just toss ingredients together and mix a little dressing into it. Why not try something different this time? Pumpkin when roasted develops a lovely caramelised flavour which goes so well with spinach. It is healthy and at the same time tasty!
Sweet caramelised honey and sesame roasted pumpkin paired with creamy ricotta, leafy spinach, crunchy almonds and a lime dressing which cuts through the sweetness of the roasted pumpkin. Continue reading “Honey Roasted Pumpkin And Spinach Salad”
This grated zucchini salad is something which I tend to make often when it is zucchini season. It is fresh and delicious. It has a lot of texture owing to the pomegranate and the almonds and not to forget the tangy-sweet dressing. 🙂

Panzanella is a classic Tuscan style salad made with slightly stale bread, fresh ripe tomatoes and basil leaves. The Italians don’t like to waste anything and this salad really proves that. Back in the olden days, panzanella was based on onions as well. Modern versions seldom use onions!

Broccoli is one of my favourite vege which I absolutely adore in stews, soups, stir fry’s, curries and also as a warm salad. 🙂 Many don’t like this versatile ingredient primarily because they might have had a bad past experience with it. It might have been over cooked, flavourless or not used correctly. Many a times, we buy broccoli but we do not know what to do with it. Sweet, succulent american corn on its own is really delish. But let me tell you, this is not your regular salsa. This right here has a few ingredients that you might not use in a regular salsa but trust me, it’s really tasty. Juicy, sweet red bell peppers, tiny yet flavorful cherry tomatoes, sharp bite from the red onion, a herb-y hit from the coriander and salty, creamy feta to give it a whole new dimension. There’s nothing better than sweet and sour Asian inspired dish, is there? Well for me, asian cuisine is comfort food in a bowl. I love making cuisine inspired or ingredient inspired dishes, especially when it is a fruit like pineapple which is generally restricted to the dessert area of cooking. A grilled pineapple salad with a sweet and sour dressing is something that I’d prefer to eat often. 🙂
It’s good to indulge in a salad with a creamy, dreamy dressing once in a while. A bit of this, a bit of that and viola, A GARDEN SALAD. 🙂
Usually a garden salad is composed of leafy greens like lettuce, cucumber and cherry tomatoes garnished with croutons and nuts. But it varies with the individual’s preferences. Please feel free to Continue reading “Garden Salad”
When ever I make salads, I try to incorporate different textures and different flavours which really makes a huge difference. A little bit of crunch from the nuts, creaminess from cheese, and a sweet-sour healthy vinaigrette is all that is needed. Be free to play around with the flavours and always experiment with the food you make. 🙂
Many people crib about their dislike towards tomatoes, and as a matter of fact, I myself used to be one among those “Haters”. Little did I know that, a little extra flavour could massively transform this boring fruit into a delicious morsel.
