Kulcha (Tawa Kulcha)


Kulcha is an Indian flatbread that is soft, pillowy and perfect accompaniment for any Indian gravy, recently I made it along with stuffed tomato (bharwan tamatar) gravy. It tastes great with malai kofta, paneer butter masala and so many other curries.

Ingredients: (Yields 9 kulchas/Serves 3)

1. Plain flour (maida)- 2 1/2 cups or 300g

2. Baking powder- 1 tsp

3. Curd- 50 ml or 3 tbsp

4. Water- 170-200ml

5. Salt- 1 tsp

6. Sugar- 1.5 tsp

7. Sesame seeds- to sprinkle

8. Chopped coriander- to sprinkle

9. Oil- 1 tbsp

10. Ghee- to brush

Method:

1. Add plain flour (maida), baking powder, curd, oil, salt and sugar to a big bowl

2. Mix it till you get a wet mud like consistency

3. Add water little by little and mix till roughly combined

4. Knead on a floured work surface for 10-15 minutes till you get a smooth, soft dough

5. Place in the same bowl, cover bowl with a damp cloth and rest for 1.5- 2 hours

6. Divide the dough into balls

7. Roll out the dough into a rough triangular shape. Meanwhile heat a tawa on medium-high flame

8. Rub water on the surface and sprinkle some sesame seeds and coriander and slightly press it in the dough.

9. Place the wet side down on the tawa and cook for 2 minutes till it releases from the pan and you can see bubbles on the surface. Do not try to flip before 1 minute because the wet side would have stuck to the pan, it will naturally release itself after it’s cooked.

10. Flip the kulcha and cook the other side for another 1-2 minutes till golden brown spots appear.

11. Brush the cooked kulcha with ghee and serve with gravy. Refer the video below
