Creamy Broccoli Soup

I love soups. They are a great way to include veggies in your meal and they can be a hearty meal on their own. There are different kinds of soups and this particular soup comes under thick soup category. The thickness is provided by the potato in the soup which gives body and creamy texture to the soup. There is very less cream used in the soup, it can be omitted too because the soup is naturally very satiny smooth and luscious.

When it is really cold outside and all you need is a bowl of hot steaming soup and a good book, this is the one you should be making. My brother makes this quite often and no doubt it is one of my favourite soups. It is really creamy and mild. It’s not to heavy , overly spiced, extremely simple and just COMFORTING! 🍲
