Schezwan Fried Rice


Schezwan fried rice is another Indo-Chinese recipe that is known for it’s spicy red chilli kick. Many people use store bought Schezwan sauce for making it but I like to make my own Schezwan paste instead. It doesn’t take long and the paste can be made and stored in the fridge for 2-3 weeks easily. The recipe for the paste varies from person to person. Some use only ground chilli paste and add ketchup. I like to grind fresh tomatoes with the chillies as I like it that way.

Chettinad Egg Curry With Chettinad Style Tomato Rice


It has been raining in Bangalore all of a sudden. The moment I think of rain, the picture of hot steamy rice with a spicy curry comes to my mind, apart from the usual chai pakoda, of course. Chettinad cuisine is one of my favourite cuisines. Their coriander, coconut and chilli rich fragrant curries and spicy rice dishes are sure to make you lick your fingers.
